I found this recipe on the blog Mennonite Girls Can Cook, they have a number of delicious looking recipes and I would encourage any of you who like to experiment to peruse their recipe archive and pick something out to make.
Maple Twist Rolls
Heat . . .3/4 cup milk
1/4 cup butter
until very warm.
Blend with 1 cup flour,
3 tablespoons sugar
1/2 teaspoon salt
1 tablespoon instant dry yeast (4 Tsp. of Active Dry Yeast)
1 teaspoon maple extract
1 egg
Beat this with an electric beater on low for 2 minutes.
Add remaining 1 3/4 cups to 2 cups of flour and knead to a soft dough.
It will become smooth and elastic in about 5 minutes.
Let rise for about 45 minutes in a bowl covered in plastic wrap.
This is the third time I have made this recipe and I could never get it to rise properly...I had talked to the owner of the original post and we were not able to narrow down the non-rising factor and that is why I finally highlighted the Yeast.....I was not using Active rise yeast....it was also suggested to let dough rise up to an hour and a half...our flour is different here than up in Canada and this might have been the reason for the difference.....
In the meantime, make your maple streusel (For the streusel, I would rec. doubling the filling and I would add the nuts after I had already spread the rest of the filling onto each layer….it was hard to smooth out the filling and trying to smooth with the nuts it tore the dough in some places.)
1/4 cup melted butter
1/2 cup sugar
1/3 cup chopped nuts
1 teaspoon cinnamon
1 teaspoon maple extract
Combine this together and let sit
Divide the dough into 3 balls.
Take out a pizza pan, and butter it.(I used parchment paper but I still buttered it)
Roll out the 3 balls of dough to about 12 inches.
Put 1/3 of the streusel on the first layer of dough, put another layer of dough on top of this and put the second amount of streusel on.
Finish with the third layer of dough and again the 1/3 amount of streusel.
Put a 2 inch cup on the center of the dough and cut 16 wedges with scissors. (use the glass as a guide as to how far to cut. They'll stay even all around . .in the picture below you can see the faint outline of the glass rim in the center)
Twist each wedge 5 times. Remove the glass.
Cover with a light Tea Towel and let rise for 30 - 45 minutes.
Preheat the oven to 375 degrees.(My oven was too hot at 375 would rec. trying 350 to start with.) I used a convection oven at 350 degrees. ( My oven was still too hot at 350 degrees and would try even cooler!!)
Bake the twists until golden brown about 18 - 22 minutes. Cool for about 5 minutes on the pan and remove to a cooling rack.
Make a glaze of ( Did not double the icing recipe, but recommend putting it in a squeeze bottle to adequately cover the entire pastry. Or even better place in a plastic bag with a piping tip...lol)
1 cup icing sugar
2 tablespoons of melted butter
1 -2 tablespoons of milk
1/2 teaspoon of maple extract
Drizzle this over the warm rolls.
If anyone makes this and can get the finished product to rise as much as the picture on Mennonite Girls Can Cook, would you please, please write me back and let me know.....this is the third time and although mine has risen a little...it is not nearly as puffy looking as the one in the original post.....Regardless.....THIS TASTES DELICIOUS...AND YOUR HOUSE SMELLS DIVINE!!!
