A Whirlwind week last week

For a while now we have been keeping abreast of my Mother In Laws health issues.  She lives down in Florida. She has had continuous health issues ever since I have been married to my husband.  This year, the issues seem to be extremely bad and getting worse.

She has been in constant abdominal pain for several months now. She goes to sleep at night in pain and wakes up in pain and it is there all day.  The doctors do not know what is wrong.  She has this other condition of too much calcium in her blood.  They cannot find where that is coming from and are just giving her medication to try and reverse the symptoms.  She is on a lot of medication at this point.

When we talked on Face Time back in May for her birthday, she was laying on the couch and saying she couldn’t get up for anything and her husband was saying she was really drugged up so to speak, and she wouldn’t even take Tim’s phone calls at times…

Well up to last week, they have been making the situation sound very dire, to the point it seemed of life-threatening.  So unbeknownst to us they made a trip down to southern Florida to where there other son lives with his wife and did some repairs on their house that they have had since last November. My husband happened to talk to them a week ago Sunday and his dad said that they were bringing his brother and his wife up to their house for a week.

This was really a surprise, for one, my BIL is an alcoholic, has been for most of his life and the tension between Father and that son is not ideal…because of the decisions his son has made over the course of his life related to the alcohol.  So for him to go ahead and bring him up to his house for a visit was a huge thing on his part…and secondly, we were surprised because my MIL has been so ill.

My first instinct is compassion, and knowing how ill my MIL has been I mentioned that perhaps we should drive down to FL to see his brother while we were there.  I knew this would be a blessing to his parents.  We have never been together for more than two days in the 10 years that we have been married (us and my BIL and the In Laws) and that was only one time.  My BIL has no drivers license due to the poor choices in his life and the chances of us seeing him at the same time at their parents house is basically a one time event…as much as his mom hopes it wouldn’t be, I see the reality of this happening again as very slim…

Anyhow, I mentioned that on Sunday evening and told my husband that if we were to go, to ask his Dad if I would be able to cook all the meals…his mom is not capable due to being ill and the Sister-in-law does not have very good cooking skills…at least that is what I surmise when my husband said he starved down there last November between his mom’s cooking and her cooking there wasn’t much to eat, taste wise or otherwise… Which is fine, I enjoy cooking and the Lord has blessed me with the ability to cook!

My husband didn’t say anything else after we talked it out and I left the issue in his court.  Monday, I hopped out to the travel trailer and started getting it ready to go in case my husband said we were going.  I was hoping it would not be too long of a visit.  The relations with my in-laws and myself are quite strained, mainly with my MIL…so the tension is there, week long visits are too long, 3.5 days are just right.  So this was huge just to even suggest going.

I had two appointments that week one on Tuesday and one on Wednesday.  My husband called Tuesday afternoon to say we would be going!  I asked when and he was thinking the next day, I mentioned the appointment and I was blessed to not have to go until Thursday.  So now I had to get everything really packed and get as much food prepped as I could so I wouldn’t have to do too much once there.

Wednesday was the marathon cooking day.  I did two different batches of cookies 3 dozen each, baked a cinnamon roll coffee cake for breakfast, made the homemade pancake mix for potatoes,bacon and pancakes one morning.  I browned the meat for Pizza rolls for lunch, meat for beef stroganoff, and meat for the cheesy hamburger and broccoli recipe I have on here, and meatballs made for spaghetti. I then baked two cake pans of a carrot cake to assemble the cake for Father’s Day on Sunday.  I was slightly exhausted.

I sent an email out the night to our Pastor asking for safe travels, for prayers for my MIL’s health and shared how bad it was and that the outlook was not looking good for her, and asked for prayers for issues relating to their dog that has bitten our children 3 times, praying it would not go after Thomas.

Thursday morning we took off about 8:30 and we finally arrived down there about 5pm.  Thankfully we were blessed with smooth travels. We drove up and unloaded from the truck and said hello’s.  Tim and I had decided to set up the playpen so that Thomas would be safe and his dad mentioned that the dog was not there.  Kind of with a look to me like “I had to get rid of the dog, because of your wife” but said to Tim, that he took the dog to the neighbors which ended up being next door so that there would be no issues.  I gave his dad a big hug and said thank you so much for the consideration regarding their dog.  I basically lost my peace and calm when I saw them last November and their dog bit my son right above his left eye and they said it was nothing and that basically I needed to get over it…when it leaves a scab, that is a bite…but then…their dog is his “3rd child”, treats it like a child and cannot stand the fact that his favorite “child” would ever do anything wrong and no one should ever mention anything bad about his “child”….that issue is a whole other post that I will spare you from!!

Ok, back on topic…we get our trailer set up, I start getting dinner ready.  We were to have the spaghetti and meatballs…now here is one of those things that is so annoying….I have asked for about 8 years now the recipe for her spaghetti sauce….never once has she given it to me…it is always oh sure when I get home, or next time I make it I will write it down…or its up in my head there isn’t one, etc…. So I asked Tim  to help me out..works like a charm every time…she’ll do anything for Tim.  I whipped out my two jars of homemade sauce and said I could use mine but I would really like to make hers and Tim asked her where the recipe was at.  Well of course it wasn’t written down, or she couldn’t get to the cook book.  I said I was sending Tim to the store to get whatever we needed to make it…and low and behold she whips open her pantry and pulls out everything she needs….

So it’s a large can of tomato puree one of those giant ones like 32 oz. and then it was one small can of tomato paste and then a tsp. of oregano and another tsp. of basil.  She said she usually adds a Tablespoon of brown sugar but didn’t have the normal kind and we used that organic type of brown sugar in the plastic container… and then she used about a quarter of a cup of Mogen and David Concord wine it  is a red wine….  The sauce comes out with a slight sweet taste and is very delicious.  See my tomato sauce always comes out with too much water and I wanted it the consistency of hers…well after doing some internet research on the way home, I figured out that I just need to let mine cook down more. 

Well I could see that his mom was still in a bit of discomfort with her abdomen and she would sit down and rest….but the whole,  “I am so ill I cannot move” that we have heard for the last two weeks…was just pure manipulation…this lady was up and about and moving around etc.  I think Tim felt just as duped as I had…it is one thing to be ill and not have a quality of life but it is quite another to make family members think that you are dying and there is no hope left and that is what she did, basically both of them…

Well the rest of the trip was the same, with my Sister-In-Law there and being computer challenged I helped her get her email set up correctly and to get rid of all the emails she had that were junk…26 pages worth!!!  I helped her get her browser fixed…she had about 7 toolbars installed etc.!!! Then once I had her set up, I organized all of my MIL’s pictures on her computer so that all their volunteer trips were together, all their missions trips were together, vacations were in another folder, etc.

It made it easier to stay busy and keep an eye on my children with my SIL there, the focus was not on me, I just needed to cook the food and make sure everything was tidied up afterwards. Praise the Lord this was easy and I was just so blessed to not be judged and criticized for every little thing I did while I was there.

Sunday came and of course it was time to go to church…I had asked the night before what time we needed to leave. I was told we needed to leave the house no later than 9:35 so that we were at church BY 10AM!  Ok, understood, we wanted pictures before we left for church with everyone looking nice and I made sure my crew was ready by 9am.

We went outside and took pictures and everyone loaded up to head over to church.  We get there and the service is still going on, I remarked to Tim that I thought it was strange that they wouldn’t have time in between services for people to leave before the next one started…and then she pipes up and says that service starts at 10:30!! WHAT!!!  I can’t believe she did that not taking into consideration that we have 6 children 3 of which are in the toddler stage and you now want them to sit quietly and behave the whole time…a small compromise would have been nice to just show up say 10 minutes before service, it would have been plenty of time to see who she wanted us to etc…. but that is how she operates, it is about her and only her…

I tell you, when you have sat in a church under a good Preacher who truly preaches the word and whose sermon’s are not using “worldly” attributes and examples….you really miss it when you sit under someone who does do that and you are so disappointed…. You would think that a Pastor of a church would not be using as an example the occasion of kissing on the first date….Shouldn’t they be preaching about staying pure and not doing that…not this preacher…his whole sermon was full of things of the world that were so out of place and shouldn’t have been used.  I am so blessed to have a wonderful Preacher that wants to keep us in the Word, preaches the Word, teaches us the Word….I am going to be so sad when the day comes that we have to leave this church.

My daughter said to me afterwards that she was so sad during her time in the youth class.  It was for ages six and up.  We took the three older ones to the room that was designated and when she was talking about it later, she said, “I was so sad and I just wanted to come out and find you in church.”  I told her next time, she felt that anywhere we were visiting to get up and come find me.  It turns out there were just babysitters in there, there was no Sunday school program, they just had them playing video games and watching movies!  What in the world…..well I guess that is the point it was of the world and not of Christ….sigh….

Sunday after church we came home, I fixed up lunch and was going to get the dinner in the crockpot.  Tim mentioned us going to the beach so I said talk to your dad about it…Well his dad had offered to take everyone out to eat which was a nice treat.  I hadn’t started the dinner so that worked and we were going to take off for the beach.  Well we ended up going a little later to dinner and it ended up that his mom would not go, it seems as if every time whether it be here or there, when it is time to go out to dinner, she comes up with some reason as to why she cannot go.  So she didn’t go, then Tim didn’t eat, his stomach was not feeling well, his dad did not eat his stomach was not feeling well, so the children and I and my Brother and Sister in Law ate, which made us ask why did we even bother to go out to dinner!!

Our family left the restaurant as soon as we were done eating and headed out to Jacksonville Beach.  It was about 8pm, the sun was just starting to go down, really breezy but it was a warm breeze.  The water felt like lukewarm bath water, just delightful….. This picture is a great one of my husband smiling, I have a slightly crazed look in my eyes because the water came in just as we were going to take the picture and surprised me!!

I am so thankful we are back home, I am thankful that my husband had a chance to see his brother and that it was a blessing to their parents. I am thankful the Lord blessed us with the time at the beach for a wonderful family time that was just us and so memorable.

Today is also a special day today.  My son Corban turned 5 at 8:45 this morning. I can usually go all year and not be too upset, but it is inevitable that at some point on his birthday I tear up and cry.  I miss him, and wish I had the chance to see him as a five year old running around my house and playing with all his brothers.  Alas, this was not to be the Lord’s plan for his life and instead he has grown up in a much better place in the Lord’s house.

We were at the beach this last Sunday evening down in Florida, I will post about that later, and I took this picture since it was so close to Corban’s birthday.

Ladies What Do Your Clothes Say About You…

I came across this video this evening through a series of links from the Pure Modesty website I mentioned earlier…I hope you take the time to watch, it is very thought provoking.

What’s new this week.

We are still on our search for property and have found a nice piece that would work for our family some how… :- )

We had seen another piece that we really liked that was within the city limits and was 18.22 acres, however, we walked that piece of property and the lower portion floods when there is torrential rain so you cannot build on that section, the other portion of the property is too steep to do anything with and that leaves only the top flat section to build on, and it would be somewhat near the road.

We would ideally like to have a piece of property where the house is not seen from the road and you have to drive down a long drive to find it.

The piece we have found is 16.3 acres. and about 45 minutes away from where we live now. It is up in the foothills and a really nice neighborhood. The owners know my husband and are willing to work any way possible to sell the land. This might work out for us to be able to purchase it somehow while we have not sold the house we live in.

In the meantime, I am reading an ebook I came across on building your own house and be your own Contractor. The book is called Build or Remodel Your Own House by Carl Heldmann.  You can find it on his website Build Your Own House.

I entered a drawing a week ago on the blog Pure Modesty.  The drawing was for a set of card devotionals called Cravings.  I think I had entered at the beginning of the week and the drawing was held on the 7th and since I did not hear anything, I deleted my reminder and deleted settings that I had put in place to count as entries….you know, “like” here on Facebook, and Follow here on Pinterest, etc. just to get extra entries…well that was required so I tidied up those loose ends this morning.

Then I went to my junk email account and saw “winner” as the subject line of the unread emails…..and sure enough I WON!!!  I sent back my address and will await the devotional cards later in the week!!!

There was a blog post a week or so ago asking us to list our Favorite things.  There were many wonderful posts to read about having a quiet moment to sip a cup of tea, having time to read a favorite book etc.  And I just had to chuckle to myself, because at this time in my life, there is not time for any of those things…however there was still something that was my favorite thing…..

Now don’t laugh too hard….

One of my favorite things is a toilette paper roll that goes around the holder silently...because it is perfectly round and has not been squished by one of 6 pairs of little hands bringing it to the bathroom or squished when they took the package out of the truck...which means in the middle of the night when you need to go, you don't hear the thump thump, thump thump as you yank on the paper.....I said it was silly, but it is music to my ears....

Well the person asking the question wrote back “okay...so i'm laughing in my bathroom this morning...and it's all YOUR fault! :) the toilet paper roll had been squished, and it thumpedThuMpeDthumped as it unwound...and i thought of you! i'm hoping that your weekend holds the silent music that you enjoy---says one understanding mom to another.”

So I am asking you all now, what is or are some of your favorite things???

A couple Recipes this week.

This week we tried new recipes that I had found on Pinterest.  The first one was

 Chicken Ranch Taco’s This came from Can You Smell That!

3 cups cooked chicken, cut up
1 pkt. taco seasoning (chicken or beef)
1/2 cup Ranch dressing
------------------
taco shells
lettuce
cheese
Ranch dressing
tomatoes
etc...


Heat a skillet over med-high heat. Add chicken & warm it for a few minutes. Sprinkle on the dry taco seasoning. Do not add any water! Heat for 5-7 minutes until all heated through & powder is stuck to the chicken.
Add Ranch dressing, heat an additional 2-3 minutes to warm through.


Serve in taco shells with all the fixings you love - plus an extra squirt of Ranch!

These were fantastic!  We used flour tortilla’s for ours and they turned out just great.  I would cook the meat almost completely done, say 90% cooked through, and then drain and then add on the taco seasoning and the rest of the chicken will finish cooking while you mix in all the seasonings and then add in the Ranch dressing. I just thought that after serving the meal and then the left overs the next day the chicken seemed overcooked, so by slowing down the cooking process a little earlier it might prevent this from happening the next time. I also used taco seasoning that I purchased in bulk, so if you have that, just measure out the same amount as you would get from a packet….which happens to be 12 teaspoons!

Next up, this recipe came from Linda’s Low Carb Menu’s and Recipes, also found on Pinterest recently.

Cheesy Hamburger and Broccoli Casserole

1 pound ground beef
1/4 cup onion, chopped, 1 1/4 ounces
4 ounce can mushrooms, drained
16 ounces frozen broccoli
Salt and pepper, to taste

Sauce:
8 ounces sharp cheddar cheese, shredded
1/2 cup heavy cream
1/2 cup mayonnaise

Brown the ground beef, onion and mushrooms in a medium skillet. Season with salt and pepper. Drain the fat. Meanwhile, put the frozen broccoli in a 2 1/2-3 quart casserole with a lid. Add 2 tablespoons water, cover and microwave on HIGH about 6-8 minutes, stirring every couple minutes until tender crisp. Drain the broccoli; stir in ground beef mixture. In a 4-cup glass measure place all of the sauce ingredients, microwave on HIGH about 2 1/2 minutes, or until melted and smooth, stirring every minute. Add to the broccoli mixture and mix well; adjust the seasoning to taste. Bake at 350º 20 minutes until hot and bubbly.

Makes 4-6 servings

This was so quick and easy to pull together.  The husband thought it was delicious so it will definitely be on the menu again in the next several weeks.  I hope you enjoy as well!!

Bible Study time…

We have been working on our second week of Family Devotion time.  I have done family devotions in the past but this time I am sitting down with a laid out format and we are really studying the bible and memorizing events etc. We are using the program from Bible Study Guide For All Ages .  I have to say the children are so excited about this and that is just the hugest blessing.  There is a daily plan that starts out with Drills over important issues to memorize..for instance, we are memorizing the 4 sections of the New Testament and then all the books of the New Testament that fall into each section.  

 

My oldest already knows them from her Wednesday evening church class, however, my younger children do not, and they have been having a great time with this.  The second section moves into the text for that day and there are some follow up scriptures that relate to the concept being taught. You might also find there are some definitions that relate to the text to further explain.  Once the text is done there are 7 questions to be answered.  The lesson is finished out by relating the lesson to your daily life with an application verse and prayer.

We use the program by doing everything orally, however, there is the option to use student workbooks and they are geared to the child’s age.  Everyone is doing the same lesson at the same time. There is also a Timeline as well as 3 additional maps to help you and the children see visually where everything is occurring.  We are using all of these and I am including pictures here so you can see the depth of how much this covers. In addition to these teaching tools there are Visuals that show the lessons you have covered in character form without text.  It is a great way to recount the bible stories and have a helping aid in case you forget the events in the order they happened. .There is one last aid and these are the Cards that teach about the books of the bible.  They have picture aids on the front that make it interesting for children and on the reverse they have text related to the book of the bible and questions related to what you read.   

In any event, we are having a blast and it is so wonderful to start out our day in this manner.  It has also helped with life lessons throughout the day to be able to refer back to our application verse and how it applies to a trial that has arisen. I hope you all have a blessed week~~

New Page added to my Blog….Recipes

Well here it is Wednesday Friday!!! It has taken me the better part of a week to get my entire old blog moved over here!! It was not so much reposting every post, I would say there was at least 80% that I did not post here, it was not relevant and it had been from 2007 to 2010 mostly…It was mostly the time consuming act of having to delete each post individually…there was not a way to go through and do batch deletes.  I have a few more things I need to tweak here as well.  It appears that when I went through Picasa recently, the place where Blogger stores all your photo’s, I deleted all the duplicate pictures due to using up all my file space….. UMMMM well, that was a big mistake, now there are multiple posts on here that have a huge black square with a white circle in them that seem to indicate the picture is missing.  I wish I would have realized that before I went through and deleted over 500 duplicate images….ACCCKK. 

 

I now have a special RECIPE TAB at the top of the page that has the links to all my recipes here on the blog. This page is separated out by Meal time as well as by the main ingredient of the meal for dinner time, i.e. Chicken, Beef, Pasta, etc. The other way to access them is to click on the Recipes Category and it will just have them all lumped together page after page.

I have many more to add, this was just the first ones that I transferred over and I have several recipes that I have tried lately that I found on Pinterest that were delicious and worthy of posting here as well.  So I hope you enjoy the new page of recipe ideas.

Nancy Leigh DeMoss: If you’re holding yourself back from the Lord, wanting to run and control your own life, how hypocritical is it to present your children to the Lord and say, “I want You to control this child; I want You to rule over this child’s life”?

And not only when the child is an infant, but when the child is older, if you’re trying to run your own life, resisting the will of God, how can it bother you when your children say, “I want to run my own life”? You say, “No, you need to obey God,” and they’re saying, “Show us. What does that look like?”

When they want to read the Christmas story, a lot of people flip to Luke 2, and they usually stop after the shepherds visited Jesus. But the rest of the chapter provides a fascinating look at Jesus’ dedication at the temple, a perfect study for this time of year.

Nancy will explain why this story is so important, continuing in a series called The King’s Dedication.

Nancy: I don’t know if they do this at the church that you are a part of, but at the church I attend, they every so often have a baby dedication. They’ll have the parents who’ve had infants born to them during the last few months bring up their babies and hold them.

The parents will dedicate the children to the Lord, and the congregation will express some sense of responsibility for the influence on these families. It’s always a sweet time. I want to talk today about a very special baby dedication that took place around the time of the first Christmas.

We read about it in Luke chapter 2, starting in verse 22. We’re going to look at Jesus’ baby dedication and then make some practical applications for parents who are believers who want to dedicate their children to the Lord.

Let me first read Luke 2, verses 22-23: “When the time came for their purification according to the Law of Moses, they [Mary and Joseph] brought him [Jesus] up to Jerusalem to present Him to the Lord (as it is written in the Law of the Lord, ‘Every male who first opens the womb shall be called holy to the Lord’).”

Now, according to the Jewish law, when a woman had her first-born male child—her firstborn son—when he was 40 days old, she would go to the temple for her purification rite. We talked about that in the last session. She would also dedicate that firstborn son to the Lord. So here we see Mary and Joseph taking Jesus to the temple in Jerusalem. This would have been Jesus’ first time to be in the temple.

In this scene, two rituals or two different rites take place—possibly three, as we’ll see in just a few moments. The first we looked at in the last session, and that was the purification of the mother—a ritual purification she would go through after childbirth.

And then we have in this passage today the presentation, or the dedication, of the infant to the Lord. This presentation or dedication of the baby was based on the Law that God gave to His people in the Old Testament right after they came out of their slavery in Egypt. You read about it in Exodus chapter 13.

They had just come out of Egypt, and before they even went through the Red Sea, God said to Moses, “Consecrate to me all the firstborn. Whatever is the first to open the womb among the people of Israel, both of man and of beast, is mine” (verse 2).

So the firstborn of every womb in the Jewish community was to be consecrated to the Lord. That word “consecrated” means to be set apart, to be sanctified, for God’s purposes.

That’s what it means to dedicate a baby to the Lord: That child is consecrated to God. It was done in remembrance of the night God delivered His people out of slavery in Egypt. You remember that last night before the children of Israel came out of Egypt?They’d been slaves of Pharaoh for 400 years, and on that last night, God smote all the firstborn sons and animals of Egypt.

The angel of death went through Egypt and killed every firstborn son. The Egyptians had rebelled against the law of God, and God sent judgment in the form of death to all the firstborn.

But the same night that the angel of death smote all the Egyptian firstborn, the angel of death passed over and spared the firstborn sons and animals of the Israelites—not because they were any more holy or righteous or deserving of God’s mercy than the Egyptians, but because they had obeyed God and had put the blood of the lambs on the doorposts and the lintels of their homes.

The angel saw the blood and said, “I’ll pass over that home.” So the firstborn Israelite sons were spared. Therefore, when the children of Israel came out of Egypt, God claimed a right to all those firstborn sons of Egypt.

God said all the firstborn sons and animals were His possession. They belonged to Him. Now, that led to another important ritual that took place with Jewish firstborn sons: not only the dedication to the Lord, but also what was known as their redemption. Parents were required not only to dedicate their children to God, but to redeem or buy back their firstborn sons by paying a redemption price.

To redeem something is to buy it back. The redemption price for every firstborn son was five shekels of silver. The five shekels was given to the priest, and that was part of the money that supported the work of the temple.

So as a firstborn male, Jesus was taken to the temple by Mary and Joseph, and He was consecrated, or presented, to the Lord. They went to present Him to the Lord. That was Mary and Joseph saying, “This child belongs to You. He is set apart for Your purposes.”

And though it’s not specifically mentioned in the Scripture, they undoubtedly would also have paid five shekels to the priest to redeem Mary’s son. Now, if that took place, they paid five shekels to redeem the One who would one day become the Great High Priest and Redeemer of the world.

Yu see here again a picture of Christ, who came to fulfill the Law. In every point, He fulfilled that which the Law pictured. He would redeem us, according to 1Peter 1, not with perishable things, such as silver or gold, but with His own precious blood (verses 18-19, paraphrased).

Now, as I’ve meditated on this passage, I want to take just a little rabbit trail. It’s not the primary point of the passage, but I think it’s an important application for believing parents.

I want to talk about this thing of parents dedicating their children to the Lord. First of all, presenting or dedicating your children to God implies the willingness to first present yourself to the Lord.

It’s significant to me that Mary presented her child to the Lord at the same time that she herself went to the temple for her purification rite that we talked about in the last session. She went through her own purification before the Lord so that she could consecrate and present her child to the Lord.

Another verse in Scripture that talks about presenting to the Lord came to mind. Do you remember where that is? Romans chapter 12, verse 1: “I appeal to you therefore, brothers, by the mercies of God, to present your bodies as a living sacrifice, holy and acceptable to God, which is your spiritual worship.”

We’re told to present ourselves to the Lord. As a parent, you want to raise your children up in the community of faith and to be a God-fearing, Christ-loving servant of the Lord. You want your children to come to know the Lord, so when you dedicate your children to the Lord, you’re presenting them to God for all of this to take place. But how can parents think of presenting their children to the Lord if they haven’t first presented themselves to the Lord?

If you’re holding yourself back from the Lord, wanting to run and control your own life, how hypocritical is it to present your children to the Lord and say, “I want You to control this child; I want You to rule over this child’s life”?

And not only when the child is an infant, but when the child is older, if you’re trying to run your own life, resisting the will of God, how can it bother you when your children say, “I want to run my own life”? You say, “No, you need to obey God,” and they’re saying, “Show us. What does that look like?”

The importance of parents themselves being consecrated and dedicated to the Lord—if you’ve never done that consciously, just say, “Lord, I am Yours. I present myself to You. I am Your child. I belong to You.”

Today would be a good time for you to do that. It’s never too late, as long as you have breath. God is still extending mercy to you for you to say, “Lord, today I present myself to You. I am Yours. I want You to run my life and be in control of my life.”

So presenting or dedicating your children to the Lord first implies the willingness to present yourself to the Lord. And then, dedicating your children to God—whether it’s in a formal service that takes place or in a less formal way—dedicating your children to the Lord is a recognition that conception and birth and life are all gifts from the Lord.

Your child is a gift from the Lord. Now, I think every parent of a newborn—certainly every mother of a newborn—recognizes as she holds that newborn baby, “This is an incredible gift.”

But if you stop to recognize that your child is a gift from God—not only when that child is six days old and hasn’t yet done anything to offend you, but when the child is 16 years old and is getting on your nerves—do you remind yourself, “This child is a gift from God?”

Psalm 127 tells us, “Behold, children are a heritage from the LORD, the fruit of the womb a reward” (verse 3). In Isaiah chapter 8, there’s that one little phrase where the prophet Isaiah says, “I and the children whom the LORD has given me” (verse 18).

What a way to live for a parent, to always be saying, “Lord, here am I and the children that You have given me. We are all dedicated to You, consecrated to You, to be used for Your purposes.”

To dedicate your children to God is to recognize that your children are a gift from God. Now, I want you right now—those of you who are mothers—to think of your children, from the littlest ones to the oldest ones. Some of you are grandmothers, maybe great-grandmothers, but think of the children God has given you.

In different seasons of life, for better or for worse, they have strengths and weaknesses. By the way, they got most of those from their parents—and you say, “Yes they got them from their dad.” But think of those children. Think of each name, each child. Picture that child in your mind and heart.

Say, “Yes, Lord, that child is a gift from You.” Now, that child may not be acting like a well-wrapped gift at the moment. That child may be causing you fits. That child may be grieving your heart, but that child is a gift from the Lord.

Dedicating that child to the Lord is a recognition of that. And then dedicating your children to the Lord is an acknowledgment that those children belong to God. It’s a sign of relinquishing ownership. This child is not mine. This child is just on loan to me to care for on behalf of the Lord. This child belongs to God.

Now, as you acknowledge that that child belongs to God, you accept your responsibility on behalf of God to bring that child up in the discipline and the instruction of the Lord.

You’re accepting your responsibility under God to care for that child, to steward that child who is on loan to your from God. So when you dedicate the baby to the Lord, you’re acknowledging that this child belongs to God, but you’re also accepting your responsibility as a parent to nurture that child according to the Word of God.

And then, when you dedicate that child to God, you are presenting, releasing that child to God for His service and for God’s purposes. You’re opening your hands.You’re saying, “This child is not mine to cling to or to hold on to or to use for my purposes. This child is to be used for God’s purposes. God has a purpose for this child’s life on this earth, and I am releasing this child to that purpose, whatever it may be.”

Little did Mary know at the moment that she dedicated the infant Jesus to the Lord, how she would be required to open her hands and release that Son to God’s holy purposes, which would cause her great pain and suffering.

Sometimes God’s purposes for your child will make your heart sad. Sometimes there will be separation. You’d like to have all your children forever, right around you, like a little mother hen, right? But God calls your child to serve Him somewhere else. When you dedicate your child to God, you’re saying, “I release this child to God’s purpose for as long as he lives.”

It’s so important for parents, I think, to be intentional about releasing and dedicating their children to the Lord. Your children, as you dedicate them to God, become your greatest legacy.

They are the means of your life being a blessing to the world, long after you are gone. That is such a privilege, as a parent, to say, “Lord, I give this child to You to be used for Your purposes.”

Now, dedicating your children to God has some practical implications that extend far beyond that church service when the child is a few weeks or months old—implications that go with you and your child as long as you both live.

Let’s talk about some of those implications. First of all, if you’ve dedicated your child to God, that releases you from fear because your children belong to God. You can release them to His care.

I have a friend who, with her husband, for several years after they got married, prayed that God would bless them with a child. She couldn’t get pregnant, and she couldn’t get pregnant.

Finally, she conceived. God gave her a child. She had a difficult pregnancy, but the child was born just a few weeks ago—a son that God gave to them. And after the baby was born, they discovered that the child, at some point in the womb, had had a stroke.

The child spent the first two weeks of his life in intensive care. They’ve now taken the child home. The child looks and seems normal in every way, but the doctors have said, “We won’t know for six months to a year whether there has been damage, and if so, how great the damage has been.”

They say the damage could be severe, but the parents have this child at home now, not knowing what they have to face. This young woman said to her dad as they were taking the baby home from the hospital, “Dad, I know we may face difficulties in the future, but we have our son. He’s God’s gift, and God knows exactly what He has planned for him.”

She’s a woman who has all the natural emotions that a mom would have under these circumstances. I know she’s cried a lot, and she’s been tempted to have fears, but she’s counseling her heart that this child belongs to God.

God will do what is best for this child, so she does not have to live—as she waits these next months to find out what are the implications for all this—she doesn’t have to live in fear because the child belongs to God. She has released him to God’s care.

Now, another implication of dedicating your children to the Lord is that that places huge responsibility on your shoulders as a parent, because your children belong to God. Not only does it release you from fear because they belong to Him, but it makes you heavily responsible. You’re taking care of something that belongs to God.

You will give an account to God for the example of your life to your children, for your faithfulness in training your children, for anything you may have put in their life or their path that will cause them to stumble in their spiritual life.

God takes that seriously, we read in the Scripture. So the fact that you’ve dedicated your children to God means it’s a huge responsibility to parent them according to the ways of God.

And then, the fact that you’ve dedicated your children to God—and you let your children know this as they grow up—will give your children a huge sense of responsibility to recognize, “Mom and Dad aren’t the ultimate ones in my life. I belong to God.”

My parents dedicated me to the Lord when I was a little baby at the Highland Park Baptist Church in Chattanooga, Tennessee. Dr. Lee Roberson was the pastor at that time, and I have no recollection of this event. I was very, very little. But my parents told me about this as I was growing up.

By the way, I had the chance before Dr. Roberson went to be with the Lord—he was probably in his 90s when he went home to heaven—late in his life, I had the chance to go and meet him and thank him for his part in dedicating me to the Lord as a baby.

It has marked my life, throughout my life, to know that my parents presented and dedicated me to the Lord to be used for God’s purposes. And throughout the nearly 50 years of my life, I have had this sense of, “I belong to God. My life is set apart for His use.” That’s an important thing for your children to know.

And then the fact that your dedicate your children to God may mean that you come to a point where you have to completely release that child to the direct oversight and maybe even discipline of the Lord.

Your child may be in his teens or 20s or 30s or older, and you’re finding you still have to recognize the implications of having dedicated that child to God.

I have a friend who dedicated her daughter to the Lord when her daughter was just a little girl. Now the daughter’s a young adult, and the daughter is making some wrong choices. They’re very foolish and very dangerous.

This is a mother who has pleaded. She’s wept. She’s appealed. She’s prayed. She’s appealed to her child, but now she’s having to live out the implications of having dedicated that child to God years ago.

She and her husband have had to communicate to that daughter, “We are releasing you to God. You answer to Him.” Through tears, that mother told me on the phone this past week, “I’ve reminded God, ‘She is Your child. She’s Your responsibility. She’s not under my roof any longer. I’m not there physically. I can’t make her do what is right, but I trust the Lord.’” And she’s told her child, “We’re trusting and committing you to the Lord.”

This past week I came across, in my church bulletin, a letter that William Carey—he was a British missionary in India—wrote to his father in 1793. It shows the heartbeat of a son who recognizes that he belongs to the Lord, but also the implications that has for parents.

William Carey said, “To be devoted like a sacrifice to the holy uses is the great business of a Christian. I therefore consider myself devoted to the sole service of God.” He’s writing his dad and telling him this. He says, “Now I am appointed to go to Bengal in the East Indies—a missionary to the Hindus.”

These are the days before email and jet service where they could go back and forth. When you went to the mission field in those days, you may never have been seen the rest of your life by your family.

He says,

I hope, dear father, you may be enabled to surrender me up to the Lord for the most arduous, honorable, and important work that ever any of the sons of men were called to engage in. I have many sacrifices to make. I must part with my beloved family and a number of most affectionate friends, but I have set my hand to the plow.

Let me ask you, have you dedicated your children to the Lord? Not just, did you participate in a church service that was called a baby dedication, but from your heart, have you presented each of your children to the Lord?

Whatever that means—whatever the Lord wants for them, however He wants to use them, however God needs to deal with them to win and conquer their hearts—have you opened up your hands and lifted up those children to the Lord and said, “Lord, they’re Yours. I present them to You for Your purposes, for Your glory.”

Breaded Italian Chicken Breasts

Breaded Italian Chicken Breasts
4 Chicken Breasts cut in half lengthwise
1 large egg mixed with about 1-2 T. of milk
1/2 cup fresh Parmesan grated
1/2 cup Italian bread crumbs
1/4 cup Italian Salad Dressing
1/4 cup butter
Dip chicken in egg mixture. Combine bread crumbs and cheese and then coat chicken with crumb mix. Put on a greased cookie sheet. Drizzle with salad dressing and place pats of butter on each piece.
Bake at 350 degrees until done. Which for us is about 15-20 min. and they are nice and tender.
Comments:
  If I am cooking for two I cut the cheese and bread crumb measurements in half so as not to waste. I don't measure out the salad dressing, rather, I just sprinkle it right on the chicken from the bottle. I also just cut off little pats of butter and place on each piece of chicken without measuring the butter out. This is one of our favorite, quick chicken recipes.

Proverbs 31:18

Tell me the first thoughts that come to your mind when you read this.  What does that verse say to you that it means?

 

I have been doing a study of Proverbs with my ladies class in Sunday school and this week we came upon this verse and I heard something I had never heard before regarding this specific verse.
The main consensus in class was that this Virtuous Woman is a planner, she thinks ahead and sees to the needs of her household to make sure things are always on hand...kind of like keeping your pantry stocked making sure you have on hand to make your meals, etc....back in the day oil was needed to keep the lamps glowing and it is referring to the fact that she made sure her lamp would never run out of oil at night because she had purchased oil ahead of time in case she used it up and needed to refill it.  She planned ahead for the needs of her household and that was the example that was used to show that....so, while she might have kept the oil in stock and at hand, she probably made sure other things were kept on hand as well and not let to dwindle down to far as to have to make an unnecessary trip to the next village.


I think it is wonderful that the Lord has given us a godly example of a woman that was not idle, took care of herself, gave to the needy, made clothes for her family, prepared for cold weather, planned ahead for her household, was resourceful and a good shopper, did yard work, managed money and worked with her hands!! There are so many women out there that don't have role models that do or did these things at least the Lord provided a wonderful example in the bible for us all!


I am so thankful that I have a really good group of ladies that digs into these verses to find out what they mean....for years I have kind of been mentally beating myself up because I wasn't staying up late enough compared to other mom's or getting up early enough when I have had all these little ones to care for...there was such a burden lifted when I heard the meaning of this verse!!

IS FORGIVING FORGETTING?

What should a Christian do if he has forgiven someone
but cannot forget the offense?

Q. A former friend hurt me deeply, and I have tried to forgive and forget. I have asked God to help me to forgive, but I have not been able to forget. Does this mean I have not forgiven? How will I know if I have forgiven?

A. Many Christians believe that forgetting is an inseparable part of forgiving.

Quite possibly, this idea comes from the fact that God forgets our sins. The Scriptures say that God will remember our sins no more (Heb. 8:12). To "remember" or "not to remember" in Scripture refers to remembering or not remembering in blessing, or remembering or not remembering in vengeance.

The thief on the cross wanted to be "remembered" when Jesus came into his kingdom (Luke 23:42). His request was like that of a person in our day who wants to be "remembered" in a wealthy person's will, not merely by being thought about, but by being included among those who obtain financial benefits from the deceased. So, when we think about it, the biblical meanings of "remember" and "remember no more" are not so strange to our culture.

Further, God knows everything; so He cannot forget anything; or He would not know everything. In contrast, we know very little, and many things may slip our memory; but we do not have the power to forget. If we try to forget, the act of trying to forget will impress the facts even more firmly in our memories.

There are two prerequisites for knowing that you have forgiven: first, you must understand forgiveness (what the Bible says about forgiveness), and second, you must have forgiven (been obedient to God's commands regarding forgiveness).

Forgiveness is an act of the will in which a person relinquishes any "right" to get even with an offender. It does not necessarily have anything to do with "feeling" that the person has been forgiven. Again, it is an act of the will, relinquishing the "right" to "get even."

If another person asks to be forgiven, then, in saying, "Yes, I forgive you," all rights to "get even," or even to remind the offender of his previous offense, or to talk to others about it, are relinquished, unless talking about it is an act of love.*

Even if the offender does not ask for forgiveness, God's command is to forgive (Mark 11:25). This means praying and relinquishing to God, the "right" to "get even." Actually, we have no "right" to "get even." God reserves to Himself the right to settle all accounts (Rom. 12:19).

As an example of forgiveness, imagine that I owed you a sum of money, and you came to me to be paid. I gave you a long hard-luck story; and you sat quietly, not believing my story. Then I asked you to forgive me the debt. You thought to yourself, He will never pay me; so I will not lose anything by saying that I forgive him the debt. So begrudgingly you said, "Yes, I forgive you the debt." As you left the office, you got very angry at yourself for saying that you would forgive the debt. In a few days you decided to try again to get me to pay you. So you came in and asked to be paid. Then I said, "I do not owe you any money."

You had relinquished all rights to collect the debt by your act of forgiveness. You had not wanted to forgive the debt, you had not forgotten the debt, and you were angry at yourself because you forgave it. But you had forgiven it. You knew that you had forgiven it because we had made a verbal contract that I no longer owed you the money. I had asked to be forgiven, and you had granted forgiveness.

Notice in the example that your "feelings" did not agree with your verbal agreement to forgive. You may feel like you have forgiven immediately after forgiving, or it may be quite some time until you "feel like" you have forgiven. Forgiveness is an act of the will. It is a contract. Feelings may or may not change at the time that you forgive.

Another misconception about forgiving is that "feeling like forgiving" is a prerequisite for forgiving. Forgiving is an act of the will, a contract, that is volitional. You can forgive because God commands it; or you can refuse to be obedient to God's command; but there is no requirement for "feeling like" forgiving or for "wanting to."

There are at least six good reasons for forgiving, and none of these includes "feeling like it" or "wanting to." First, God commands forgiveness when asked (Matt. 18:22) and even whenever the offense is remembered (Mark 11:25); second, God proclaims that He is the One who has a right to "get even" and promises that He will "square all accounts" (Rom. 12:19); third, refusing to be obedient to God's command to forgive results in a breakdown in fellowship with God (Matt. 6:15); fourth, God has forgiven us (Eph. 4:32), and we are commanded to follow His example and forgive others; fifth, we have offended a holy God more, and He has forgiven us more, than others could offend us (Matt. 18:23-33); and finally, there is the danger of chastisement (Heb. 12:6) if we will not forgive others (Matt. 18:34,35).

However, if there were only one reason to forgive others--the command of God (Mark 11:25)--then forgiveness should be done as an act of obedience, and "feeling like it" would not be necessary.

Jesus did not "feel like" going to the cross. In the Garden of Gethsemane, His feelings were screaming, "No! I cannot do it" (Luke 22:44). He was sorrowful (Matt. 26:37,38). He prayed that He would be able to avoid the cross (Mark 14:35). Then, in spite of His feelings, as an act of the will, He committed Himself to the will of the Father (Mark 14:36), and He endured the cross, despising the shame (Heb. 12:2). His determination to do the Father's will and to suffer and die as the Sin-Bearer kept Him on the cross, when legions of angels would have rescued Him (Matt. 26:53).

Where then do we get the idea that God is more pleased by obedience when we "feel like it" and when obedience is easy than when we do not feel like it and obedience is hard? Who loves most: he who does for another what is easy, or he who does for another what is hard?

Clearly, being obedient to God by forgiving another is no more dependent upon "feeling like it" than the obedience of Jesus in going to the cross when He did not "feel like it." In this, too, He is our example.

The feeling of anger toward a forgiven person may, or may not, subside immediately upon forgiving the offender. Also, the feeling of anger may come back to a lesser degree from time to time; but eventually, the fact of forgiveness overcomes the fact of the offense, and the memory of the offense loses its power to cause negative feelings.

But be sure that you have prayed, turning the penalty of the offense over to God. Sometimes Christians only pray, asking God to help them forgive. He may honor this kind of prayer; but His command is to forgive. So be obedient and pray, relinquishing all "rights" to "get even."

If the angry feelings do not subside, or if they come back from time to time, pray, telling God that you have been obedient to his command to forgive, that in obedience you have turned the offense over to him, that He has promised to square all accounts, and that you know that He will square all accounts. Then ask him to change your feelings toward the offender in His good time.

While you are waiting for God to change your feelings toward the offender, obey another of God's commands; and it is likely that He will change your feelings toward the offender as you are obedient to this additional command.

He has commanded that you love your enemy (Luke 6:27,28). This Scripture passage does not mean that you must "feel good" toward your enemy (the one who has offended you). Instead it means that, as an act, or acts, of the will, you dedicate yourself to doing good for him, without regard to how badly you "feel" toward him.

Jesus gives three ways to love your enemy. The first way to love your enemy is to do good things for him. That is, to do good and helpful things for him or to provide good or necessary things for him. The second way to love your enemy is to "bless him." "Blessing him" means complimenting him or saying good things about him to others. Be careful that your compliments and what you say about him to others is truth and not flattery. The third way to love your enemy is to pray for him. Pray for God's will to be worked out in his life. Pray for his good, not for God to change him according to your desires.

There may be situations where it is inappropriate or impossible to do good things for an enemy, but it is always possible to pray for an enemy as long as he lives.

Do not let your feelings control you. Instead, be obedient to God's command to forgive. Be obedient to God's command to love your enemy. Leave the feelings to God. You may be surprised how quickly He will change your feelings toward the offender. But if He does not choose to change your feelings as soon as you would like, you can still be obedient to His commands, and he will be pleased with your obedience.

*Editorial Note: Neither vertical forgiveness (releasing the penalty of the offense to God through prayer--Mark 11:25) nor horizontal forgiveness (releasing the offense to a repentant offender--Luke 17:3-4) require that the offended person act as if he has forgotten, if love demands otherwise. Just tidbits the Lord has laid on my heart

We had a sermon on the 12th dealing with the Sin of Pride.....
I have to say, I am blessed with one of the best Pastor's God has ever gifted with the talent of sharing God's Holy word!!!!  I won't say I have THE best, only because ya'll would immediately write back to say Noooo, I have the best Pastor...or my Husband is the best Pastor...


Now the sermon was about David and his sin of pride in wanting to number his people....but the nugget in the sermon for me that day was the part about Ornan
1Ch 21:22  Then David said to Ornan, Grant me the place of this threshingfloor, that I may build an altar therein unto the LORD: thou shalt grant it me for the full price: that the plague may be stayed from the people.
1Ch 21:23  And Ornan said unto David, Take it to thee, and let my lord the king do that which is good in his eyes: lo, I give thee the oxen also for burnt offerings, and the threshing instruments for wood, and the wheat for the meat offering; I give it all.
Ornan surrendered everything and without hesitation.  Ornan would have done so even had the King not been willing to pay him money for these items.....


Our Pastor said that aside from Jesus, Ornan was probably the greatest surrenderer in all the bible.  The concept of surrender is a familiar one to all of us....we must decrease in order to increase, we must surrender our fleshly desires in order for the Lord's will to take over our life....


I don't know about anyone else and their walk with the Lord, but as for me, it is my fervent desire, my passion, an all consuming flame to surrender my life to the Lord...to let him use me as he would...to let the Lord be the one in control of me...that I am just here to make sure that His temple is maintained in proper working order that He might be able to work through me.


Now, I know that in some areas of my life it is very easy to surrender to the will of God....Childbearing for instance....I made up that decision (HA....see I like to think I made the decision but it is really the Lord who made that decision) to leave the number of children I would have up to the Lord years ago.....


I can surrender my thoughts about having some huge house and a nice piece of property to live on....I don't need it, don't need the taxes that come with that...I just need a place to live humbly for the Lord and not have to fill it up with material possessions.....


However, as with most of us, there are areas that we can readily, and not so readily, admit that we have not surrendered all to the Lord.  My one big, blaring area, at least to me is my area of submission....The Lord knows my desire in this area.  I have been working on this for a while....like really focusing on it for about the last nine months or so.  I had a wonderful long talk with my Pastor last night where I was able to really get a better understanding of what this meant. This area of submission is something that I desire so much and I know the Lord is helping me in this area. It is one of the main areas that I speak about first to the Lord each day in my concentrated prayer time.  I almost feel as if I can step out of myself so to speak and look down at where I am at and see how close I am getting to where the Lord would have me to be.


I have just felt so convicted in this area, that I want it all surrendered to the Lord, that the Lord would be so blessed and so beaming that this child of his was following the way she should the teachings set before her.  I would like to be an example of Ornan who surrendered her life for the Lords use without worry of the consequences because of my flesh getting in the way.


Anyone else have issue with talking too much when trying to get your point across....???? Yep, that would be me some of the time...most of the time.....mind you, I am using biblical references to back up my side whatever the conversation may be...
My Pastor reminded us ladies in a sermon two weeks ago that we were to be quiet and not talk so much....ouch, ouch, ouch.... I need to let my chaste behavior win my husband, my meek and humble spirit, my actions and not my words be the blessing that they need to be to my husband.....


I can only pray that by hearing this sermon about surrendering and two sermons about the wife and the husbands roll in a marriage all within a very short period of time....that the Lord is using these tools to help guide me in the right direction..... and is answering my prayers and putting my desires into action by being accountable...by being transparent.


I need to give up my festering wounds on the inside and frustrations that my husband and I are not on the same page spiritually and give up my resentments because of this so that the Lord would see me surrender completely in this area....If I am not holding onto resentments and am instead going along with being meek and humble and not withholding showing the love that is to be my husbands as commanded in the bible.....Now mind you, I love my husband to the ends of the earth...but with those littler resentments...it is so easy to say..."nope, not gonna make those oatmeal raisin cookies you like so much!"....just not doing those loving things I would normally do....do you see what I am talking about....


I want to glorify the Lord in my love for my husband, I want to glorify the Lord in my submission to my husband, I want to glorify the Lord in the surrender of my life to following his Word and his Will for my life by obeying what he has written out for us all.


ok...enough of my ramblings...just needed to get it down on paper so to speak~

Stuffed Mushrooms, Poppy seed Salad, Chicken Parmesan

Where has my week gone with my menu!!!  Wednesday was to be Chicken Parmesan, well Tim called and said he was going to be pretty late that night and to go ahead and eat with out him. 

Well, I had the chicken defrosting in the microwave and decided to put the meal on hold until the next night and we ended up having Frozen pizza...the good ole stand by for occasions such as this.  All I had to do was to remember to take the chicken out of the micro. and put in the fridge. 

Well Thursday comes and I get the chicken out of the freezer, let it defrost outside for a little bit, go to use the microwave....ACCKKKK there was the chicken from the night before!  Into the garbage it went...I detest forgetting things in the microwave.
So Thursday I decided to do a favorite for Tim since we don't have it very often and I did our clone recipe from the Olive Garden for their Stuffed mushrooms. mushrooms, chicken parmesan and this wonderful salad...Winter Fruit Salad with Lemon Poppy Seed Dressing...


Don't these look delicious!  Delightful is what I say.

1/3 c. bread crumbs seasoned
1/4 c. canned minced clams (drain liquid)
1 T. shredded parmesan cheese
1 T. shredded Romano cheese
1/2 teaspoon minced garlic
3 T. chicken broth
12 medium white button mushrooms with stems removed
3 T. butter, melted
2 T. minced red bell pepper
2-3 slices mozzarella cheese (this is not nearly enough, it takes about 4-5 slices of the type that is already sliced in the cheese department)
1/2 teaspoon minced fresh parsley.

1.  Preheat oven to 450 degrees

2. Combine breadcrumbs, clams, parmesan cheese, Romano cheese, and garlic in a medium bowl.  Stir with a fork.  Add the chicken broth 1 Tablespoon at a time and stir after each addition with the fork.  Keep the stuffing fluffy by not over stirring.

3.  Fill each of the mushroom caps with the filling (I pack it in there, just make sure the surface is flat so that it supports the cheese on top.)  Arrange the stuffed mushrooms in a shallow baking dish with the stuffing facing up.
4.  Use a brush to dab melted butter over each mushroom.  Add enough so that the butter trickles down the sides of each mushroom and rests in the baking dish.  Pour any leftover butter into the dish, then scoot the mushrooms next to each other.

5.  Sprinkle the minced red bell pepper over the tops of the stuffed mushrooms.

6.  Arrange the slices o cheese over the mushrooms.  Tear the slices to cover all the mushrooms leaving no stuffing uncovered. (I cover each mushroom individually, I think they are saying push them close together and just lay the cheese over the top of two or three mushrooms at one time with one slice...)

7. Bake the mushrooms for 12 to 15 minutes or until the cheese is golden brown.  (I usually bake until it is melted and pop under the broiler for a minute to get the golden brown color).

8.  When the mushrooms come out of the oven immediately sprinkle them with the minced parsley and serve. ( ya gotta eat these right away, once the cheese starts to cool off it just is not the same!)

Next up, the Chicken Parmesan...
1 jar of marinara sauce
1 egg
1-2 Tablespoons of Milk
1/2 cup parmesan cheese
1/2 cup bread crumbs seasoned
1 package boneless skinless breasts sliced in half lengthwise
1 package of Mozzarella cheese already sliced (not the ones that are individually wrapped but the ones that have a piece of wax paper in between them in the package...it is like a package of 12 slices or less...)
about 1 cup of oil...

Ok so, wash your chicken off and slice it in half length wise, one package will usually give you 6 slices of chicken to work with.
Pour the oil in your pan and heat to medium maybe medium-high not any hotter.  Test your oil by sticking the handle of a wooden spoon in the oil...when the bubbles radiate out quickly your pan is hot enough.

While waiting for the oil prepare the following:
Take two small plates or pie tins  and in one, put your egg and about 1 tablespoon of milk and mix together...just eyeball it to see if it is enough liquid for all your chicken... In the other plate or tin, mix your parmesan cheese and breadcrumbs.
Next take out your baking pan, (I use the glass 9 x 13), coat the bottom thoroughly with the marinara sauce and set to the side.

Now, take and dip your chicken into the egg mixture and then into the crumb mixture on both sides and then gently lay it into the frying pan so as to not spatter the hot oil.  Fill up your pan with chicken and go back to the first piece and flip over.

You can cut into the thicker part of each filet and check for doneness just barely past the pink stage gives you the nice tender juicy flavor...completely white is over done and tough...pink is not safe ..so just keep an eye on them. 

Take your cooked chicken and place into your baking pan.  Take a spoon and place a little marinara on top of each piece of chicken and then take your mozzarella cheese and place on top of the sauce. 

When all the chicken is in the pan place in the oven uncovered for about 10 minutes maximum at about 350 degrees so that your cheese is nice and melted.

Winter Fruit Salad with Lemon Poppy Seed Dressing
 

I don’t have it written down in my notes where I found this originally, but I did a search on the internet with the title and found this link on Allrecipes.com

Dressing
1/2 cup sugar
1/3 cup lemon juice
2 teaspoons finely chopped onion
1 teaspoon Dijon mustard
1/2 teaspoon salt (I always leave this out)
2/3 cup oil
1 tablespoon poppy seed
Salad
1 large head of romaine lettuce torn into bite-sized pieces (just use enough for your family)
4 oz. (1 cup) shredded Swiss cheese
1 cup cashews...(I used walnuts)
1/4 cup sweetened dried cranberries
1 apple cubed
1 pear cubed

In a blender container or food processor bowl with metal blade, combine sugar, lemon juice, onion, mustard and salt.  cover; process until blended.  With machine running add oil in slow steady stream, processing until thick and smooth.  Add poppy seed process a few seconds to mix....(I just toss everything in at once and voila done).

In large serving bowl, combine all salad ingredients toss to mix, pour dressing over salad toss to coat.

So last night Tim treated us and we went out to eat.  Tonight we are back on track with the menu and fixing the Tortellini!
