This week we tried new recipes that I had found on Pinterest. The first one was
Chicken Ranch Taco’s This came from Can You Smell That!

3 cups cooked chicken, cut up
1 pkt. taco seasoning (chicken or beef)
1/2 cup Ranch dressing
------------------
taco shells
lettuce
cheese
Ranch dressing
tomatoes
etc...
Heat a skillet over med-high heat. Add chicken & warm it for a few minutes. Sprinkle on the dry taco seasoning. Do not add any water! Heat for 5-7 minutes until all heated through & powder is stuck to the chicken.
Add Ranch dressing, heat an additional 2-3 minutes to warm through.

Serve in taco shells with all the fixings you love - plus an extra squirt of Ranch!
These were fantastic! We used flour tortilla’s for ours and they turned out just great. I would cook the meat almost completely done, say 90% cooked through, and then drain and then add on the taco seasoning and the rest of the chicken will finish cooking while you mix in all the seasonings and then add in the Ranch dressing. I just thought that after serving the meal and then the left overs the next day the chicken seemed overcooked, so by slowing down the cooking process a little earlier it might prevent this from happening the next time. I also used taco seasoning that I purchased in bulk, so if you have that, just measure out the same amount as you would get from a packet….which happens to be 12 teaspoons!

Next up, this recipe came from Linda’s Low Carb Menu’s and Recipes, also found on Pinterest recently.
Cheesy Hamburger and Broccoli Casserole
1 pound ground beef
1/4 cup onion, chopped, 1 1/4 ounces
4 ounce can mushrooms, drained
16 ounces frozen broccoli
Salt and pepper, to taste
Sauce:
8 ounces sharp cheddar cheese, shredded
1/2 cup heavy cream
1/2 cup mayonnaise
Brown the ground beef, onion and mushrooms in a medium skillet. Season with salt and pepper. Drain the fat. Meanwhile, put the frozen broccoli in a 2 1/2-3 quart casserole with a lid. Add 2 tablespoons water, cover and microwave on HIGH about 6-8 minutes, stirring every couple minutes until tender crisp. Drain the broccoli; stir in ground beef mixture. In a 4-cup glass measure place all of the sauce ingredients, microwave on HIGH about 2 1/2 minutes, or until melted and smooth, stirring every minute. Add to the broccoli mixture and mix well; adjust the seasoning to taste. Bake at 350º 20 minutes until hot and bubbly.
Makes 4-6 servings

This was so quick and easy to pull together. The husband thought it was delicious so it will definitely be on the menu again in the next several weeks. I hope you enjoy as well!!
